We've had a pretty good week here on the ridge! Enjoying the weather, the animals and each other!
I started making lunch for the Driftless Organics Crew on tuesday wednesday and thursday, so that's fun for me. I get done with the cows and then quick change my barn clothes to kitchen clothes and head down the road to cook for at least 12 people! It's fun so far, but I need more ideas - vegetarian leanings over there and it's been a while since I cooked vegi... The yard is in bloom again! We also are having a little trouble with some of our trees! It's the apples!!! They are dropping their fruit already. Needless to say - we aren't ready, and they aren't really that ripe or that delicious. The apple trees need work in general. So, whaddya do with a yard full of apples in various stages of decay? The garden is delightful and exciting. We have NEVER had tomatoes that looked this good, and peppers TOO!!! wow!!! Any body got a clue about the long green peppers and when they are ripe? We took a little drive and had a picnic on Saturday and that was nice, back home in time to get some stuff done around here! WOO HOO!!!

Do you have any neighbors that raise pigs? Maybe they'll come and pick up the apples for them. That is what our old neighbor did with his. Now the neighbor has grandsons who come and get them and they put them out for the deer -- with the hopes that the deer will come to the same place in the fall and they will shoot them. I know awful, but that is what their plan is. And she has lots of apples falling off already too. I think it is the tree just thinning itself so the other apples get big.
Do you like to make veggie burritos or enchiladas. My kids favorite burrito right now is sauteed zuchinni, pinto beans (slighly mashed) a little salsa stirred in and topped with cheese inside a lovely sprouted tortilla. -- don't I have good kids who eat healthy stuff?

hogs love apples. Harriet would say "Bapples" - I remember picking up apples for Mr. Algreen when we were kids and he gave them to hogs.
Hey Liz -- This looks like a yummy recipe and you could leave the meat out or put in some TVP if you wanted too.

Those look like the Cayenne peppers I used to grow. They are definatly some kind of hot pepper.
They should change color soon to a deep red.

Have you thought about apple juice? It can be sterilized by boiling and soring in containers lkie with canning. You could also airlock ferment for cider. No air lock you get apple vinegar. All value added products.
